A local restaurant has a 'Cozy Comfort Foods' section on their menu. Meatloaf is front and center. There are probably a million and one (okay, maybe I exaggerate, but still) ways to prepare meatloaf. I use a variation on my mother's recipe.
Ingredients:
1½ pounds lean ground beef
1 large egg
1½ cups wheat cracker crumbs
1/2 teaspoon dry mustard
1/4 teaspoon celery seed
1/4 teaspoon ground black pepper
1/2 cup onions, chopped
1 cup (no salt added) diced tomatoes
1. Combine ingredients in a large bowl. Shape into a loaf and place into a 5 by 9-inch loaf pan.
2. Bake for about 40 minutes in a 400-degree pre-heated oven. Let cool for 5 minutes and serve.
I serve meatloaf with brown rice and a vegetable, but potatoes are also a tasty side.

I've recently rediscovered meatloaf. It's such an easy dish to make. I can throw it together the night before and pop it into the oven when I get home from work. The hubster loves it too. I'll have to give your recipe a whirl. It sounds delish!
ReplyDeleteThis looks great, Dawn, and winter is a perfect time for meatloaf, especially one like "Mom's." One of the best things about a family recipe is that when we prepare it, we remember the person who gave it to us.

ReplyDeleteMy mom always used a combination of veal, pork and beef for her meatloaf and I continue to follow her tradition. Usually I have enough to make 2 loaves so one goes in the freezer for another time. Once it's frozen, it can be popped out of the loaf pan and repackaged.
Who doesn't like meatloaf???
